Cut from the Top Round, the London Broil packs incredible flavor, but needs to be prepared properly. Best if marinated overnight first, we typically use something like a balsamic vinaigrette to allow the vinegar to help in tenderizing. Then sear hot and slowly roast at 180 degrees until cooked to your desired doneness. Next step is to allow to rest for 10 minutes, then slice on the bias into 1/4" thick pieces.
